Savory Pork Muffins

Ingredients:
1 lb lean ground pork
3 egg whites
1 cup rolled oats
3/4 cup finely diced onion
2 ribs celery, finely diced
2 cloves garlic, finely diced
2 tsp ground black pepper
1 tsp red pepper flakes
1 tsp salt
1/2 tsp ground cumin
1/2 tsp thyme

Directions:
  1. Preheat oven to 375°F.  
  2. In a large bowl, thoroughly combine all ingredients.  
  3. Divide mixture into 12 equal portions and place into lightly greased muffin cups.
  4. Bake 30 minutes or until internal temperature reaches 160°F and tops are nicely browned.

Serve with fresh fruit and fat-reduced yogurt or a side salad.

Makes 12 muffins.
